Nines, a new name in Amwell End
Lin and Kim - new owners at Nines
Gregori's, the former Italian restaurant in Amwell End, is now under new management. Ware Online talks to the new partners Lin and Kim, about their ambitions, what led them to take it on and why the change of name to 'Nines'.

Having enjoyed Gregori's as an Italian, it may seem odd that Lin and Kim have chosen to break with that style, but they felt that while they had loved the best of Gregori's it was time for a change in food and style.

The restaurant will serve predominantly British meals, featuring dishes such as Lamb Shanks, Sausage & Mash, Fillet Steaks, Grilled  Sea Bass, Duck in sauces and on Sundays a traditional lunch with all the trimmings.

Recognising the vital importance of good quality ingredients in delivering good food, they aim to source as many of their ingredients as possible locally, for instance using a local butcher for high quality home reared meats.

A big part of their plan is changing the name to 'Nines' along with the big changes to the menu! New signage is dependant on a successful planning application.

As well as good food, they want to establish Nines as a relaxed venue, increasing the lounge seating area and introducing some Jazz. Nines will feature live Jazz with Sunday Lunch and every second Thursday evening will feature live singers in a range of Jazz styles.

As for the new name, as Lin explained it to Ware Online, "The premises is number 9 Amwell End, and after trying out various new names on friends and family, Nines was the one that seemed to best fit with the building and relaxed welcoming atmosphere they are striving to create."

Nines aims to reflect Lin and Kim's passion, with both having food and hospitality in their genes, as they told us:

Kim's grandmother was a "Gentleman's club" owner for many years and her brother trained as a chef in Claridges, London and is also a hospitality lecturer. Kim spent many of her younger days working in London Bars.

Lin's father was a publican who had a very successful thatched pub & restaurant in the  New Forest, this was where she got into cooking and often thought that one day she may have her own restaurant.
